Huiji Lotus Seed Pig Stomach Soup

Ingredients:

  • Pig Stomach: 1 pc (approx.500g)
  • Whole Pepper Corn: 40g (washed, drained dry, smashed slightly)
  • Lotus Seed: 100g (washed, soak for 4 hrs or over night)
  • Pork Rib: 500g (washed, blanched)
  • Huiji Health Tonic: 2 cups (Huiji measuring cup)

 

Method:

  1. Cut away fats surrounding pig stomach, turn pig stomach inside out and wash clean, scrape away all grime inside, use coarse salt to rub against surface till non slimy, wash clean with water, blanch in a pot of boiling water for 1 min, scoop out, run under cold water, now turn back pig stomach, drain dry from water, stuff slightly smashed whole pepper corn into pig stomach
  2. Place prepared pig stomach and pre-soaked lotus seed in a pot with 2 litres of water, bring to a boil, lower flame and simmer for1 -1 ½ hours
  3. Add pork rib, continue to cook for an ½ hour, season with salt to taste, switch off fire, remove pig stomach from soup to cut into pieces
  4. Pour in 2 cups of Huiji Health Tonic, serve
